Crispy Choco-Banana Granola

Whether with milk, as a topping on your breakfast bowl or snacked straight from the jar: Granola always finds its way into your daily meals! Versatile as it is, it also goes great with (n)icecream, yoghurt, pudding and fresh fruit.

Granola is easy to make yourself. The advantage is that you know exactly what's in it (only healthy ingredients, no additives, no preservatives) and that you can adapt the mixture to your taste. Ah and by the way, this recipe makes your home smell like banana bread – lovely.

A word of warning: these delicious granola chunks are highly addictive. Rumour has it that a whole tray of granola has been eaten straight out of the oven ... So watch out!

Unlike its supermarket counterparts, our choco-banana granola is only lightly sweet. This and the crunchy chocolate chips are what we particularly love about it.

You’ll need:

  • chopped hazelnuts
  • 60 g chopped almonds
  • 30 g sunflower seeds
  • 170 g fine rolled oats
  • ½ tsp ground cinnamon
  • 1 pinch of ground tonka bean
  • 1 pinch of salt 1 ripe banana (with dark spots on the skin)
  • 50 g coconut blossom syrup or maple syrup
  • 50 g coconut oil
  • 75 g dark chocolate chopped into small pieces


Preparation:

1. Mix the chopped hazelnuts, chopped almonds, sunflower seeds, oats, spices and salt in a bowl.

2. Gently heat the coconut oil and syrup in a small saucepan, add the mashed banana and mix well.

3. Pour the banana mixture over the dry ingredients and mix well. Use your hands to help getting smaller crispies.

4. Spread evenly on a baking tray covered with baking paper and bake in the oven on the middle shelf at 140°C convection. This will take about 20-35 minutes, depending on the oven. (The perfect time to take it out is when the first pieces on the edge of the tray start to turn dark.) After about 10-15 minutes, use a wooden spoon to loosen up the granola so that it gets nice and brown on all sides.

5. Let the mixture cool down completely and add the chocolate chips. Store in an airtight container so that it stays crunchy for a long time.

    Tips:

    • If you place the cooled down granola in a pretty jar, it will stay fresh for several weeks. A charming little present for friends and family!

    • For a sweeter result, sprinkle coconut blossom sugar over the mixture spread on the tray before baking.

    • Don't be surprised if your granola comes out of the oven still soft. It will get crunchy once it has cooled down.
