We're all familiar with smoothies with carrots and other vitamin-rich ingredients: healthy, yet creamy and filling. In this carrot and ginger mocktail, our favorite vegetable plays a completely different role. A juicer or, alternatively, a sieve removes all the plant fibers, creating a wonderfully light, tangy drink you can almost see through.
So it's time to rethink: The carrot is leaving its breakfast corner and is becoming socially acceptable. There's nothing wrong with serving the carrot and ginger mocktail in the afternoon or evening. It's especially good as an appetizing aperitif before dinner. Just give it a try – this drink is surprisingly different and truly delicious.
This is what you need:

1 ripe peach, peeled and sliced

50 g fresh pineapple pieces

2 medium-sized carrots

1 orange
-
1 lemon

1 tsp grated ginger

mineral water
-
ice cubes

Fresh mint leaves and/or snack carrot for decoration
It's that easy:
- Clean, chop and juice the carrots (using a blender and sieve or in a juicer)
- Squeeze the orange and lemon and mix with the carrot juice
- Stir in grated ginger and let stand for 5 minutes
- Pour the juice mixture over a glass filled with ice cubes and top up with sparkling mineral water
- Garnish with mint leaves. If you like, add a pretty, slender snack carrot to the glass.
