We love coffee. We really do. But that doesn't change the fact that too much coffee isn't good for many of us. You may have noticed how calm, clear and grounded you feel when you reduce your coffee consumption. The body breathes a sigh of relief and has the chance to bring itself into balance again, regardless of the “drug” of coffee.

Are you looking for a healthy alternative to your morning café latte? Then you should dare to flirt with the pink beetroot latte!

  • Beetroot is a (perhaps previously underestimated by you?) superfood full of folic acid, vitamin C and, above all, iron. As a plant source of iron, beetroot is particularly suitable for people who do not eat meat and also for women who menstruate heavily.

  • Beetroot contains many antioxidant flavonoids that strengthen the immune system.

  • The cheerful pink is an eye-catcher in the coffee mug and puts you in a good mood in the morning.

Caution: Too much beetroot can cause constipation in some people. Please do not drink the beetroot latte every day, but rather as an occasional treat.

You need this:

  • 1 raw beetroot tuber

  • 350ml plant milk (oat milk, almond milk...)

  • 1 finger-width piece of fresh ginger

  • 1 tbsp liquid sweetener of your choice (honey, agave syrup...)

It's that easy:

  1. Peel the beetroot, chop it into small pieces and juice it. Use kitchen gloves and an old board for this, as the beetroot juice leaves stubborn stains.

  2. Put the plant milk in a pot and heat until just before boiling point.

  3. Meanwhile, remove the peel from the piece of ginger and grate it into the juice.

  4. Remove the milk from the heat. Add the juice to the milk and stir until foamy using a whisk or milk frother.

  5. Sweeten to taste.

To take away, simply pour the beetroot latte into the CUP Coffee to go cup. Don't worry, it will be completely clean again later: the smooth stainless steel walls of the CUP hardly provide any surface for the pink residue from the beetroot to attack. Just make sure they don't dry out for days.

Tip for those in a hurry: If you're in a hurry or don't want the hassle of whole beetroot, you can also use ready-made beetroot juice. You have to make minimal compromises in terms of taste and consistency (everything has a price), but the beetroot latte still tastes delicious.
